Our Ergonomic Chef's Utility Knife has been carefully designed and evolved in our own kitchen to be a light, strong, tool that will not tire your hand or wrist - even after lengthy periods of cutting and chopping. (We needed to do this because of a wrist problem.)
It is hand-crafted from 48A stainless steel, one of the few favorite steels of both knifemakers and chefs. It keeps its edge, and is easy to sharpen. The thin blade (.078') is flat ground for easy cutting and movement around vegetables. The Drop Handle helps you hold the blade at a comfortable correct angle for extended use. No bolsters and full wooden handles for lightness. Your choice of wood from our exotic wood options. Comes with four striking 1/2 Inch Fossil Ivory pegs and three 1/8 Inch mosaic pins. The available colors of our high quality Fossilized Ivories are shown below. (Please allow for some color variation in these natural materials.) Our wonderful Ivories have been reclaimed from the ground after sharing the earth for up to 30 millennia! Even after all this time, Fossil Ivory remains warm and sensuous organic ivory; it is not petrified. It has developed many of its beautiful colors by taking up minerals from the ground. In time, the Fossil Ivories you wear or use will take on very personal hues from your contact. They will become a part of you.
